Mmm…doesn’t bruschetta make you think of a drinking wine on an outdoor patio in some quaint Tuscan village? No? Just us? Okay then.
No matter where you picture yourself biting into this delicious appetizer, we can all agree it’s a fan favorite for parties, dinners, or just because you have a hankering.
What’s better is that it’s not really an unhealthy choice to begin with. And with a few tweaks and modifications, we’ve made it Back to 30® Weight Loss Plan – approved!
If you’re in the mood for a little fancy feasting without the sacrifice, check out our recipe for Bruschetta Chicken below:
INGREDIENTS
• 3 tbsp. extra-virgin olive oil, divided
• 1 pound boneless skinless chicken breast
• 1 tbsp. dried oregano
• 2 tsp. garlic powder
• kosher salt
• Freshly ground black pepper
• 3 c. chopped tomatoes
• 1/2 shallot, minced
• 3 cloves garlic, minced
• 1/4 c. Freshly Chopped Basil
• Shaved Parmesan, for garnish
• Balsamic glaze, for drizzling
DIRECTIONS
1: In a large skillet over medium heat, heat 1 tablespoon oil.
2: On a plate, season chicken with oregano, garlic powder, salt, and pepper.
3: Add chicken to skillet and cook until golden and no longer pink, 8 minutes per side.
4: In a large bowl, make bruschetta topping: Stir together tomatoes, olive oil, shallot, garlic, and basil and season
generously with salt and pepper.
5: Top chicken with bruschetta topping and shaved Parmesan. Drizzle with balsamic glaze
There you have it! It’s our favorite appetizer – quick, easy, and healthy!
